These stalks are harvested young for tenderness and best flavor. Bright, sweet and earthy celere has a distinctive watery/salty flavor. Leaves can be used similar to parsley. Best stored whole, wrapped in aluminum foil in the crisper drawer. Once the stems are cut they should be stored in a sealed container, submerged in water.
